Ingredients
- 4 count Pizza dough balls (15 oz)
- 3 lb Cooked brisket, chopped
- 2 cups BBQ sauce
- 2 tbsp Apple cider vinegar
- 20 oz Low-moisture mozzarella, shredded
- 8 oz Smoked gouda, shredded
- 2 large Red onion, thin sliced
- 1 cup Pickled jalapeños
- 2 cups Coleslaw
Instructions
- Warm and chop brisket: Chop cooked brisket into small cubes; toss with a few tablespoons BBQ sauce and vinegar. Warm gently in a skillet — cold brisket drops the oven temp and steams the pie.
- Preheat stone to 500°F: Heat stone or steel at 500°F at least 40 minutes. This pie uses leftover smoked brisket; you are not smoking meat tonight.
- Stretch rounds and BBQ base: Stretch four 12–14 inch rounds. Spread a thin layer of BBQ sauce — less than a saucy sandwich. Brush rims with oil.
- Cheese, brisket, onion: Layer mozzarella and gouda, then brisket and red onion. Pickled jalapeños if your hall likes heat. Do not pile brisket an inch thick or the center never crisps.
- Bake until cheese spots brown: Bake 10–13 minutes until cheese browns and crust sounds hollow. Brisket is cooked; focus on crust and cheese set. Rotate once.
- Slaw on top, rest, and cut: Rest 2 minutes. Top with cold coleslaw in the center of each pie or serve slaw on the side — hot slaw wilts. Cut 8 slices. Smoked Brisket BBQ Pizza is hall BBQ night on a crust.
Tonight's spread
- Cut pies into hall slices (8 per pie minimum) and fan on sheet trays.
- Keep a fresh pie warming in the oven — pizza dies fast on the counter.
- Line up Smoked Brisket BBQ Pizza on the main counter with serving spoons — firefighters grab fast between calls.
- Keep a backup tray warm in the oven at 200°F for late arrivals after a run.
Hall tips
- Keep a backup tray warm in the oven for late calls — nothing worse than cold plates after a run.
- Taste for salt at the end — hall palates run salty after long shifts.
Leftovers
- Cool leftovers in shallow containers within two hours — deep pots stay hot too long.
- Label trays with date and reheat to 165°F minimum before second shift.
- Pizza stone or steel
- Peel or inverted sheet pan
- Large sheet trays
- Instant-read thermometer
- Aluminum foil
