- 3 Cups Dill Pickle Chips
- 2 Cups Ketchup
- 1 Cup Yellow Mustard
- 1 Cup Mayonnaise
- 1 Cup BBQ Sauce
Instructions
- Form mini patties: Divide ground beef into 2-ounce portions (about 32–36 patties for a full hall). Roll gently into balls, then flatten into thin patties slightly wider than the buns — they shrink on the griddle. Indent the center with your thumb so they cook flat.
- Season and griddle in batches: Season patties with salt and pepper. Griddle over medium-high 2–3 minutes per side until browned and 160°F. Work in batches so the griddle stays hot — crowded patties steam.
- Melt cheese on patties: Top each patty with American cheese in the last minute; cover with a dome lid or foil tent until melted. Transfer finished sliders to sheet trays in a warm oven at 200°F.
- Toast buns: Butter cut slider buns and toast cut-side down on the griddle until golden. Pile toasted bottoms and tops in separate foil-lined pans.
- Build the toppings bar: Line up lettuce, tomato, onion, pickles, ketchup, mustard, and mayo in labeled bowls with tongs and spoons. Put cold toppings on ice if service runs past an hour.
