Ingredients
- 8 count Bone-In, Skin-On Chicken Thighs
- 3 Lb Baby Potatoes
- 2 Lb Fresh Green Beans
- 1.5 Cups Panko Bread Crumbs
- 0.8 Cup Grated Parmesan Cheese
- 0.5 Cup Unsalted Butter
- 0.3 Cup Dijon Mustard
- 2 Tsp Dried Thyme
- 1 batch Kosher Salt And Black Pepper
Instructions
- Heat the oven and prep the pan: Heat oven to 425°F. Line a full-size rimmed sheet pan with foil and coat lightly with oil spray. Pat chicken thighs completely dry — wet skin will not crisp. Mix panko and Parmesan in a shallow bowl.
- Coat chicken and vegetables: Whisk melted butter and Dijon in a large bowl. Brush the top and sides of each thigh with a thin layer of the butter-Dijon mix. Toss potatoes and green beans in the remaining butter-Dijon, spread in a single layer on the pan, and nestle thighs skin-side up with space between pieces. Season everything with thyme, salt, and pepper.
- Press on the Parmesan crust: Press the panko-Parmesan mixture firmly onto the mustard-coated tops of the thighs only — not the skin underneath. The crust should look evenly coated; loose crumbs will burn before the chicken cooks through.
- Roast until done: Roast 25–30 minutes, rotating the pan halfway, until potatoes pierce easily with a fork, green beans are tender with browned edges, and chicken registers 175°F in the thickest part near the bone. If crust browns too fast, tent loosely with foil for the last 8 minutes.
- Rest and serve from the sheet: Rest the pan 5 minutes so juices settle. Serve two thighs per firefighter with potatoes and beans spooned from the same pan. Hold covered at 200°F up to 25 minutes if a call interrupts service.
Tonight's spread
- Plate Sheet Pan Parmesan-Dijon Chicken Thigh Dinner with sides in separate pans so the crew can mix portions.
- Line up Sheet Pan Parmesan-Dijon Chicken Thigh Dinner on the main counter with serving spoons — firefighters grab fast between calls.
- Keep a backup tray warm in the oven at 200°F for late arrivals after a run.
Hall tips
- Assign one cook to proteins and one to sides — rookies stay on timing, not multitasking.
- Prep all mise en place before the bell — this meal wins on organization, not speed hacks.
- Keep a backup tray warm in the oven for late calls — nothing worse than cold plates after a run.
- Taste for salt at the end — hall palates run salty after long shifts.
- Pull chicken at 160°F and let carryover hit 165°F — dry breast ruins crew morale.
Substitutions
- Chicken thighs ↔ breasts (thighs forgive overcooking on the flat-top).
Meal prep
Minimal prep — chop aromatics before shift change so you can cook as soon as the board quiets.
Leftovers
- Cool leftovers in shallow containers within two hours — deep pots stay hot too long.
- Label trays with date and reheat to 165°F minimum before second shift.
- Half-sheet pans
- Parchment paper
- Large sheet trays
- Instant-read thermometer
- Aluminum foil
