Instructions
- Morning start: At breakfast, place roast in a 6-to-8-quart slow cooker and wash hands after handling raw beef.
- Season roast: Sprinkle ranch seasoning over the roast and add broth and pepperoncini with some brine.
- Set cooker: Cover and cook on low for 8 hours; do not repeatedly lift the lid because heat escapes.
- Check liquid: At mid-shift, confirm there is liquid around the roast and add broth if the pot looks dry.
- Cook potatoes: Near dinner, boil potatoes until fork-tender and steam carrots until tender-crisp.
- Test tenderness: Slide a fork into the roast; it should twist easily without forcing.
- Shred beef: Move roast to a tray and shred with two forks, discarding large pieces of fat.
- Finish juices: Skim excess fat from the cooker juices, then return shredded beef and stir.
- Hold safely: Set slow cooker to warm only after the beef is above 165°F; keep it above 140°F.
- Serve dinner: Spoon juicy beef over mashed potatoes with carrots and pepperoncini on the side.
