Ingredients
- 4 count Pizza dough balls (15 oz)
- 16 oz Cream cheese, softened
- 1 cup Sour cream
- 24 oz Low-moisture mozzarella, shredded
- 8 oz Cheddar, shredded
- 12 oz Bacon, cooked and crumbled
- 2 cups Pickled jalapeños, sliced
- 4 count Fresh jalapeños, thin sliced
- 1 tsp Garlic powder
- 1 tbsp Kosher salt
Instructions
- Whip popper spread: Beat cream cheese with sour cream, garlic powder, and salt until smooth. Fold in half the bacon. This replaces tomato sauce — keep it spreadable, not chunky.
- Preheat stone to 475°F: Heat stone or steel at 475°F at least 35 minutes. Cream cheese pies scorch above 500°F on the bottom before the center sets.
- Stretch rounds and spread base: Stretch dough to 12–14 inches. Spread a thin layer of popper cream cheese mix edge to edge, leaving a rim. Too thick and the center stays cool.
- Cheese, jalapeños, bacon: Layer mozzarella and cheddar, pickled jalapeños, fresh jalapeños if using, and remaining bacon. Press jalapeños into cheese so they do not roll off on the peel.
- Bake until cheddar bubbles: Bake 11–14 minutes until cheddar edges brown and the crust is crisp underneath. Jalapeño Popper Pizza should taste like the appetizer — if it tastes like plain cheese bread, add more jalapeños next time.
- Rest and cut: Rest 3 minutes — cream cheese stays molten. Cut 8 slices per pie. Warn the crew about fresh jalapeño heat; keep ranch nearby for rookies.
Tonight's spread
- Cut pies into hall slices (8 per pie minimum) and fan on sheet trays.
- Keep a fresh pie warming in the oven — pizza dies fast on the counter.
- Line up Jalapeño Popper Pizza on the main counter with serving spoons — firefighters grab fast between calls.
- Keep a backup tray warm in the oven at 200°F for late arrivals after a run.
Hall tips
- Keep a backup tray warm in the oven for late calls — nothing worse than cold plates after a run.
- Taste for salt at the end — hall palates run salty after long shifts.
Leftovers
- Cool leftovers in shallow containers within two hours — deep pots stay hot too long.
- Label trays with date and reheat to 165°F minimum before second shift.
- Pizza stone or steel
- Peel or inverted sheet pan
- Large sheet trays
- Instant-read thermometer
- Aluminum foil
