- 8 oz Cotija cheese, crumbled
- 1 cup Fresh cilantro, chopped
- 1 count White onion, finely diced
- 2 cups Salsa verde
- 8 count Lime wedges
Instructions
- Brown the chorizo: Cook chorizo in a large skillet over medium-high, breaking it into small crumbles, 8–10 minutes until fully cooked and rendered. Drain most of the excess fat, leaving a thin coating in the pan.
- Soften the onion: Add diced yellow onion to the rendered fat; cook 3–4 minutes until softened.
- Scramble the eggs into the chorizo: Whisk eggs with a pinch of salt; pour into the pan. Stir gently over medium-low heat until just set and still glossy — chorizo is salty, so the eggs need very little extra seasoning.
- Warm the tortillas: Warm corn tortillas in a dry skillet or wrapped in foil in a low oven, about 30 seconds per side, until pliable.
