- 3 Lb Ribeye Or Sirloin, Thinly Sliced
- 0.5 Cup Soy Sauce
- 3 Tbsp Brown Sugar
- 2 Tbsp Sesame Oil
- 2 Cups Kimchi
- 2 count Cucumber, Julienned
Instructions
- Marinate sliced beef: Toss thinly sliced ribeye with soy sauce, brown sugar, grated pear or apple, garlic, and sesame oil. Marinate 20 minutes while rice cooks.
- Cook short-grain rice: Rinse rice; cook 1:1.25 with water 15 minutes. Rest covered 10 minutes.
- Sear bulgogi in batches: Heat a cast iron skillet until smoking. Sear beef in single layers 2–3 minutes per side until caramelized edges appear — do not crowd or meat steams instead of chars.
