Ingredients
- 4 lb beef chuck roast
- 5 whole dried guajillo chiles
- 3 whole dried ancho chiles
- 1 large white onion
- 8 cloves garlic cloves
- 3 whole plum tomatoes
- 6 cups beef broth
- 1 tbsp ground cumin
- 1 tbsp dried Mexican oregano
- 1 whole cinnamon stick
- 2 whole bay leaves
- 2 tbsp apple cider vinegar
- 24 whole corn tortillas
- 0.5 cup fresh cilantro
- 3 whole lime
- 2 tbsp kosher salt
Instructions
- Toast and blend the chiles: Toast guajillo and ancho chiles in a dry pot 1–2 minutes per side until fragrant, not scorched. Soak in hot water 15 minutes, then blend with quartered onion, garlic, tomatoes, cumin, and 1 cup broth until smooth.
- Sear the beef: Pat chuck chunks dry, season with salt. Sear in a large Dutch oven over high heat in batches, 3–4 minutes per side, until deeply browned—this builds the base flavor for the broth.
- Build and braise: Return beef to the pot, pour in the chile blend and remaining broth, add oregano, cinnamon stick, and bay leaves. Bring to a simmer, cover, and braise 3–3.5 hours until beef shreds apart with a fork.
- Shred and finish: Remove beef, shred with two forks discarding excess fat. Strain the broth, skim the fat, stir in vinegar, and taste for salt—consommé should taste rich and deeply savory, not greasy.
- Serve the dipping ritual: Warm tortillas, pile with shredded beef, top with diced onion and cilantro. Ladle hot consommé into small cups for dipping tacos, with lime wedges alongside.
