Ingredients
- 2 lb pizza dough
- 12 large eggs
- 1 1/2 lb deli ham
- 2 cups shredded mozzarella
- 1 roasted red pepper
- 2 tbsp olive oil
- 1/2 cup grated Parmesan
- 1 cup marinara sauce
Instructions
- Heat the oven: Heat oven to 425°F. Line a sheet pan with parchment. Stretch each dough ball into a 10x14-inch rectangle on a lightly floured surface, keeping edges slightly thicker.
- Prep the filling: Soft-scramble eggs over low heat until just set but still glossy. Spread on a tray to cool 5 minutes—hot eggs will melt cheese prematurely and tear dough.
- Fill and roll: Layer ham, scrambled eggs, peppers, and mozzarella on the lower third of each dough rectangle, leaving a 1-inch border. Roll tightly from the bottom, pinch seams closed, and place seam-side down on the pan.
- Bake until golden: Brush rolls with olive oil and sprinkle Parmesan. Cut small vents on top. Bake 20–22 minutes until deep golden and internal egg filling reaches 165°F in the center.
- Rest and slice: Rest stromboli 8 minutes before slicing into thick portions with a serrated knife. Serve with warm marinara for dipping at the line.
